These chives will last forever

Have you every bought just one bunch of chives, use only half of them in a recipe, then lost the rest of the chives as they go unused in the crisper?

My wife and I will buy chives, generally when we really need them to complete a recipe, but will always end up with chives left over. We then figure out ways to mix chives in with other meals until the bunch is done. Either that, or the chives sit in the fridge until they are inedible.

A reader of Cuisine at home mailed a tip published in last months issue about "never-ending" chives. All you do is put chives, roots down, into a vase with water. I found you just need about 2 inches of water to allow the roots to soak. When you need fresh chives, just clip them from the top. The best part? The chives continue to grow. Not only are your chives always fresh, but they never run out! We've used chives off the same bunch for almost one month.
